The present invention relates to mugwort vinegar and a manufacturing method thereof. More specifically, the present invention relates to mugwort vinegar which mixes and ferments a constant ratio of an alcohol extraction solution extracting mugwort with alcohol into a base using a water extraction solution extracting the mugwort with water, and a manufacturing method thereof. The manufacturing method of mugwort vinegar comprises the following steps of: manufacturing the alcohol extraction solution by extracting the mugwort with the alcohol of 60 to 80 wt% as an extraction solvent; manufacturing a malt solution eluted with saccharides by adding a malt into the water extraction solution manufactured by extracting the mugwort with water as the extraction solvent; mixing the alcohol extraction solution so that an alcohol content is 5 to 9 wt% based on the total weight while the malt solution is the base; and inoculating and fermenting vinegar starter to the mixed solution obtained from the mixing step.본 발명은 쑥을 이용한 쑥식초 및 그 제조방법에 관한 것으로, 보다 상세하게는 쑥을 물로 추출한 물추출액을 이용한 베이스에 쑥을 주정으로 추출한 주정추출액을 일정비율로 혼합하여 발효시킨 쑥식초 및 그 제조방법에 관한 것이다.
