PROBLEM TO BE SOLVED: To provide a balsamic vinegar-like sauce which is superior in having a mild sweet-and-sour taste and mellow aroma particular to balsamic vinegar, without depending on maturing for a long period of time.SOLUTION: A method for producing the balsamic vinegar-like sauce having a viscosity of 0.5-100 Pa s includes subjecting a mixed liquid containing balsamic vinegar, brown sugar and xanthan gum to heating and concentrating treatment.
