The present invention relates to a method for producing an aloe vera extract having enhanced antioxidant activity. The method includes the steps of: putting aloe vera at a predetermined ratio of solid to liquid in an extraction solvent； and shaking and extracting the aloe vera at a predetermined temperature for predetermined time. According to the method, extraction time, density of the extraction solvent, extraction temperature, and the ratio of solid to liquid are set to make a value of a FRAP analysis calculated by Mathematical equation 2 and/or a value of a CUPRAC analysis calculated by Mathematical equation 3 be a predetermined value or greater. According to the method of the present invention, the extraction solvent, the extraction density, the extraction temperature, and the ratio of solid to liquid can be determined in an easy manner. Therefore, the method can be advantageously used for producing the aloe vera extract having enhanced antioxidant activity.본 발명은 알로에 베라를 소정의 고형분과 액체의 비율로 추출 용매에 넣는 단계； 및 소정의 추출 온도에서 소정의 추출 시간 동안 상기 알로에 베라를 항온진탕 추출하는 단계를 포함하며, 수학식 2에 의해 계산된 FRAP 분석에 대한 값 및/또는 수학식 3에 의해 계산된 CUPRAC 분석에 대한 값이 소정의 값 이상이 되도록 추출 시간, 추출 용매의 농도, 추출 온도 및 고형분과 액체의 비율 값을 선정하는 항산화능이 강화된 알로에 베라 추출물의 제조 방법에 관한 것이다. 본 발명에 따른 알로에 베라 추출물의 제조 방법은 최적의 항산화능을 나타내는 알로에 베라 추출물을 제조하기 위한 추출 용매, 추출 농도, 추출 온도 및 고형분과 액체의 비율을 용이하게 결정할 수 있으므로, 항산화능이 증가된 최적의 알로에 베라 추출물을 제조하는데 유용하게 이용될 수 있다.
