The present invention relates to a method for manufacturing collagen using a pH titration method. The method of the present invention can manufacture collagen from which an unpleasant odor is removed while extracting collagen at a high yield, and thus can be applied to products which are sensitive to odor such as cosmetics and food without additional processing. The method comprises the steps of: recovering dermis homogenizing removing a telopeptide moiety inactivating protease recovering a supernatant performing a filtration process and recovering collagen.본 발명은 pH적정법을 이용한 콜라겐 제조방법에 관한 것으로, 콜라겐을 고수율로 추출하면서도 불쾌한 냄새가 제거된 콜라겐을 제조할 수 있어, 추가적인 가공 과정 없이도 화장료 및 식품 등과 같이 냄새에 민감한 제품에 적용 가능하다.
