Especially holding property of a flavor component can be enhanced by containing the processing oil and fat or the flavor enhancement composition for processing oil and fat processed products in a water phase part and/or an oil phase part when the processing oil and fat or the flavor enhancement composition for processing oil and fat processed products is water-in-oil-type emulsion composition or an oil-in-water-in-oil-type emulsion composition.
