Les travaux de la demanderesse àla base de la présente invention montrent que la mortalité des micro-organismes probiotiques au cours de la granulation estétroitement liée aux conditions opératoires de granulation et auxcaractéristiques des micro-organismes choisis. Ces travaux ontconduit à l'établissement d'une expression mathématique permettant de fixerensemble les caractéristiques de la levure probiotiqueainsi que les paramètres du procédé de manière à ce que les pertes en micro-organismes après granulation soient inférieures à 1log CFU/g d'aliments granulés.
