PROBLEM TO BE SOLVED: To provide a new method for producing germinated seeds, which enables to control the multiplication of various microorganisms without adding an additive to germination water on the production of the germinated seeds such as germinated unpolished rice, and enables to effectively use GABA (γ-aminobutyric acid) and vitamin B1 increased on the germination of the seeds, to provide a method for producing a germinated seed paste, and to provide devices therefore.SOLUTION: The method for producing the germinated seeds includes charging with seeds S0 and germination water W0 in a germination tank 1, promoting the germination of the seeds S0, and circulating the germination water W0 between the germination tank 1 and the outside, wherein the germination water W0 taken out on the outside of the germination tank 1 is thermally sterilized, cooled, adjusted to a temperature suitable for the germination of the seeds S0, and then returned to the germination tank 1.COPYRIGHT: (C)2013,JPO&INPIT【課題】発芽玄米等の発芽種子を製造する際に、発芽水に対して添加物を加えることなく雑菌の増殖を抑えることができるとともに、種子が発芽する際に増強されるGABA(γ-アミノ酪酸)やビタミンB1を有効活用することのできる新規な発芽種子製造方法並びに発芽種子ペーストの製造方法並びにこれらの装置を提供する。【解決手段】発芽槽1に種子S0と発芽用水W0を投入し、種子S0の発芽を促して発芽種子を製造する方法において、前記発芽用水W0を発芽槽1と外部との間で循環させるものであり、発芽槽1の外部に取り出された発芽用水W0を、加熱殺菌し、冷却し、更に種子S0の発芽に適した温度に調温した後、発芽槽1に戻す。【選択図】図1
