PROBLEM TO BE SOLVED: To provide a starch modifier to be added to a starch-containing food product exemplified by flour paste, sauce and soup in order to improve viscosity and palate feeling of the food, and to provide a starch-containing food product given with excellent melting feeling in the mouth and smooth palate feeling in spite of having moderate body feeling.
SOLUTION: The starch modifier contains as the active ingredient, polyglyceryl fatty acid ester having 22C saturated fatty acid as the constituent fatty acid. The polyglyceryl fatty acid ester has an HLB of not less than 7.
