The present invention relates to a method for preparing a colored sugar-free sweet potato jam. The sweet potato jam prepared according to the preparation method of the present invention has the high sugar content even if sugar is not added, has excellent taste and texture, and has improved preference including a color, natural texture, etc. by using colored sweet potatoes. The method comprises the following steps: washing and cutting colored sweet potatoes; steaming the cut colored sweet potatoes; adding water and starch degrading enzyme, and saccharifying and concentrating the colored sweet potatoes; and adding organic acid and pectin to make the colored sweet potatoes in a jelly form.본 발명은 무가당 유색 고구마 잼의 제조방법에 관한 것으로서, 본 발명의 제조방법에 따라 제조된 고구마 잼은 설탕이 첨가되지 않았음에도 당도가 높고 맛과 식감이 우수하며, 유색의 고구마를 이용함으로써 색상, 천연감 등을 포함한 전체적인 기호도를 향상시킬 수 있다.
