PURPOSE: A manufacturing method of fermented sacred lotus seeds is provided to keep the taste and the nutrients of fermented soybeans by injecting and fermenting Bacillus natto to sacred lotus seeds and to minimize the bad smell of fermented soybeans.CONSTITUTION: A manufacturing method of fermented sacred lotus seeds comprises the following steps. Thoroughly wash the selected sacred lotus seeds. Dip the washed sacred lotus seeds in clean water for 10-12 hours. Boil the steeped sacred lotus seeds in a moderate amount of water. Pull up the boiled sacred lotus seeds and cool at room temperature for a fixed amount of time. Inject Bacillus natto to the cooled sacred lotus seeds whereby the rate of the sacred lotus seeds and the Bacillus natto is 1000:2 wt%. Ferment the sacred lotus seeds containing the Bacillus natto in a fermentation room at 35-45°C for 1-3 days.
