PROBLEM TO BE SOLVED: To eliminate such weak points that cooked baked sweet potato is insufficient in terms of sweetness and is different in cooking quality though it achieves a fluffy texture since making the baked sweet potato has been considered so far as an extension of a play using fire after cleaning a yard, a stove for burning grass or firewood or burning fire for preparing a bath and has always resulted in different doneness, and further making the sweet potato has been recognized as an occupation only after the emergence of a stone baked sweet potato and a stove baked sweet potato.SOLUTION: (1) Far-infrared rays are utilized as many as possible for heating an uncooked potato from its inside. (2) The far-infrared rays are emitted as much as possible by the same heat source. For the reason, burning fire is utilized. A Dutch oven made of cast iron is used and gravels with high silicon dioxide content are spread in its inside. (3) The inside of the Dutch oven is kept at a slightly lower temperature of 110-140°C for baked sweet potato in order to obtain stickiness and sweetness in the baked sweet potato instead of a fluffy texture. (4) The burning fire after burning firewood or the like is utilized as the heat source.COPYRIGHT: (C)2014,JPO&INPIT【課題】昔は焼き芋は庭掃除した後のたき火や、柴,薪を燃やした竈、風呂焚きの熾火を利用したお遊びの延長線上の物であった。従ってその出来、不出来もいつものことで,石焼き芋、壺焼き芋の出現でようやく職業としての認知が出来て,焼き芋のほくほく感は出来たが甘さの面で不十分であり,出来上がりにばらつきがあった。かかる弱点をカバーしたのが、この蒸し焼きいも製造装置である。【解決手段】1:生芋の内部から加熱するように出来るだけ多くの遠赤外線を利用する。2:同じ熱源で出来るだけ沢山の遠赤外線を放射せしめる。この為に熾火を利用し、鋳鉄製のダッチオーブン使用、その中に二酸化珪素高含有の玉砂利を敷き詰める。3:焼き芋をほくほく感でなく、ねっとり甘く仕上げるために焼き芋としてはやや低温の110度C-140度Cにダッチオーブン内を保つ様にする。4:熱源としては薪類を燃やした後の熾火を利用する。【選択図】図1
