The present invention relates to a method and an apparatus for evaporating and extracting a fluid component from a plant and an extract obtained by the same. According to the present invention, phytochemical degeneration is prevented by evaporation extraction at a low temperature lower than in the case of hot water extraction or distillation extraction, extraction of an aroma component and moisture contained in the plant itself including volatile matter of the plant can be performed as well as a result of the evaporation extraction, extraction of high-purity essential oil can be performed even without an additional essential oil process because no external liquid is mixed as a solvent, and the extraction can be performed without any change in component or destruction of and decrease in various minerals and an electrolyte component contained in the plant moisture because an evaporation chamber is filled with inert gas during the evaporation extraction process.
