Composition (I) comprises organic solvent and emulsifier (I) having HLB value >； 9. and composition (II) comprises organic solvent and emulsifier (II) having HLB value 8. Independent claims are included for the following: (1) preparation of cast, three-dimensional, porous gelatin structure； (2) porous gelatin material； (3) cast, three-dimensional, porous gelatin structure； (4) use of porous gelatin material or structure as carrier for fuel cells, for culture of artificial skin, artificial organs, fatty tissue and blood vessels and as an implant； and (5) method for implanting biocompatible porous gelatin material.
