PROBLEM TO BE SOLVED: To provide a xyloglucan-divalent cation complex and a stabilized composition containing the same.SOLUTION: The complex contains polysaccharides and divalent cations and is characterized by the following (1) and (2), and further, the stabilized composition contains a phosphate: (1) the polysaccharide is xyloglucan and (2) the blending ratio of the polysaccharides and the divalent cations is 100:0.01 to 100:2.0.
