PURPOSE: A producing method of rice protein hydrolysate containing high contents of branched chain amino acid is provided to prevent the feeling of irritation from the rice protein hydrolysate.CONSTITUTION: A producing method of rice protein hydrolysate containing high contents of branched chain amino acid comprises the following steps: crushing rice protein mixing the crushed rice protein and purified water in a weight ratio of 1:4-10 heating the mixture at 35-70 deg C, and enzyme-decomposing the mixture using endoprotease deactivating the endoprotease, and enzyme-decomposing the mixture using exoprotease at 35-70 deg C and deactivating the exoprotease, and filtering enzymatic hydrolysate separated from precipitates of the mixture. The endoprotease is selected from maxazyme, protex, or neutrase. The exoprotease is flavourzyme. The enzyme-decomposing processes are performed at 40-65 deg C for 1-12 hours.
