PROBLEM TO BE SOLVED: To solve the problem wherein although the manufacture of imitation shark fin has been sometimes tried before because of the context where the shark fin has good texture, and is delicious and in demand, those imitations are all made according to the appearance and the texture, and especially for food imitations, while the appearance, seasoning and texture are also important requirements, it is the component constitution of the imitation which should be essentially the main object of imitation.SOLUTION: A method of manufacturing an imitation shark fin includes steps of: adding cartilage powder of sharks and material for adjusting the physical properties which have the substantially same components as a fin line of a shark fin to sodium alginate powder stirring and mixing the same then making the mixture into a paste using water as a solvent forming the paste like a shark fin by applying a squeezing bag with a nozzle, a form and various kinds of noodle making machines (devices) dipping the formed paste in calcium chloride solution with a concentration of 5% to gel the sodium alginate, which is originally water-soluble, still including cartilage powder and the others as calcium alginate salt which resists water-solubility using the resultant material as raw material of imitation shark fin and shaping and drying the material to be commercialized as an imitation shark fin. The imitation shark fin contains all of principal components contained in the natural shark fin.COPYRIGHT: (C)2012,JPO&INPIT【課題】フカヒレは食感がよく美味であり需用もある。そのような背景もあって以前から模造フカヒレの製造に幾つかの試みがある。しかしそれらは総て外観や食感のみの模造であり特に食品の模造は外観,調味,食感も重要な要件だが模造品の成分構成こそが本来模造の主対象でなければならない。【解決手段】 アルギン酸ナトリュ-ム粉にフカヒレの鰭条とほぼ同成分のサメ類の軟骨粉や物性調整用の物質を付加し攪拌混合の後純水を溶媒としてペ-スト状にしてノズル付きの搾り袋,型枠,多種類在る製麺機(器)を応用利用してフカヒレ様に成形しそれを5%濃度の塩化カルシュ-ム溶液に浸漬して本来水溶性であるアルギン酸ナトリュ-ムを軟骨粉その他を包含したままで難水溶性のアルギン酸カルシュ-ム塩としてゲル化させ模造フカヒレの素材とし整形,乾燥の工程を経て模造フカヒレとして製品化した。これらは天然フカヒレに含む主要成分総てを含有する。【選択図】図1
