A method to monitor the individual metabolic response and generate nutritional response that allows monitoring the effect of food and beverages consumed for a qualified subject, in which the qualified subject has a stable fasting glucose level without having to use exogenous insulin, which involves monitoring a glucose level in the qualified subject, comprising the steps of: a) consecutively performing a plurality of measurements of a glucose level in the qualified subject by means of a measuring device (100; 150); b) in the measuring device (100; 150) generating the first data corresponding to the level of glucose measured; c) transmit the first data to an analysis device (200); d) in the analysis device (200) generate second data representing at least one measure for the variability of a subject's glucose level from a time series of glucose measurements represented by the first data; e) compare the second data with the reference data and the additional processing of a comparison result to generate a conclusion about the effect of the food products consumed by the subject on the individual's glycemic response of the subject; and f) provide a response corresponding to the conclusion in an output device (200).Un método para monitorizar la respuesta metabólica individual y generar respuesta nutricional que permita monitorizar el efecto de los alimentos y bebidas consumidos para un sujeto cualificado, en el que el sujeto cualificado tenga un nivel estable de glucosa en ayunas sin tener que usar insulina exógena, que implique la monitorización de una nivel de glucosa en el sujeto cualificado, que comprende los pasos de: a) realizar consecutivamente una pluralidad de mediciones de un nivel de glucosa en el sujeto cualificado mediante un dispositivo de medición (100; 150); b) en el dispositivo de medición (100; 150) generando los primeros datos correspondientes al nivel de glucosa medido; c) transmitir los primeros datos a un dispositivo de análisis (200); d) en el dispos
