PROBLEM TO BE SOLVED: To provide a technology capable of simply and accurately evaluating water-retaining condition of target rice for cooking which is impregnated into water and capable of assisting enhancement of taste of cooked rice.SOLUTION: An impregnation step for accommodating a plurality of target rices for cooking R in a measurement container 41 at a state that the rices are laminated in a vertical direction, a measurement step for measuring laminate height of the target rices for cooking accommodated in the measurement container 41 with time and a determination step for determining whether the target rices for cooking becomes water-retained condition suitable for rice cooking by saturation of water-retaining rate of the target rices for cooking R or not.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】水に浸漬される炊飯対象米の含水状態を簡便的確に評価することができ、炊飯された米飯の食味を向上するための一助となり得る技術を提供する。【解決手段】複数の炊飯対象米Rを鉛直方向に積層した状態で測定容器41に収容し、水に浸漬する浸漬ステップと、測定容器41中に収容された炊飯対象米Rの積層高さを経時的に測定する測定ステップと、測定された積層高さに基づいて、炊飯対象米Rの含水率が飽和して炊飯対象米が炊飯に適した含水状態となったか否かを判定する判定ステップとを行う。【選択図】図1
