An emulsion stabilizer comprising a biopolymer blend of at least one cellulose ether and at least one crosslinked and modified starch, wherein the at least one cellulose ether or crosslinked and modified starch is hydrophobically modified, and the total amount of cellulose ether in the biopolymer blend is 50 wt% or less. The invention also relates to an emulsion composition comprising said emulsion stabilizer, and more particularly to a water-in-oil emulsion.
