<;P>;PROBLEM TO BE SOLVED: To provide a method for creating a low pressure-resistant yeast which can be sterilized by a pressure treatment at a pressure value not deteriorating the advantages of non-heating sterilization, to provide a method for producing a fermented food with the low pressure-resistant yeast, to provide a fermented food produced with the low pressure-resistant yeast, and to provide a method for sterilizing the fermented food produced with the low pressure-resistant yeast. <;P>;SOLUTION: The method for creating the low pressure-resistant yeast comprises screening of the low pressure-resistant yeast from a wild strain or a strain subjected to a mutation treatment.
