PROBLEM TO BE SOLVED: To provide potato syrup made from sweet potato having improved taste and flavor free of unpleasant taste of malt or a malt odor, functioning as a dietary supplement with a luxurious feel and a nutritional function such as extention of the best-before period and the shelf life.SOLUTION: A potato syrup composition is obtained by adding β-amylase contained in sweet potato juice or sweet potato powder as an enzyme for saccharification to a raw material derived from sweet potato prepared by adding water to sweet potato followed by heating, and saccharifying the raw material while heating at 60-75°C for 30-60 minutes.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2016,JPO&INPIT【課題】サツマイモを原料とするイモ蜜であって、麦芽による雑味や麦芽臭がなく、味、風味が向上すると共に、賞味期間の延長や保存可能期間が長く設定できる栄養学的な機能性を重視した高級感のある健康補助食品としてのイモ蜜を提供する。【解決手段】サツマイモに加水、加熱処理を行って得たサツマイモ由来原料に、サツマイモの絞り汁若しくはサツマイモパウダーに含まれるβ―アミラーゼを糖化用の酵素として添加し、30~60分間、60~75℃で加熱処理しながら糖化処理を実行して得られたすイモ蜜組成物。【選択図】図1
