PURPOSE: A complex heating vacuum dryer for producing red ginseng is provided to successively manufacture large amount of black ginseng using a cooling dehydration system in reduced pressure environment and a ginseng streaming process at a pressurization state.CONSTITUTION: A complex heating vacuum dryer comprises: a dryer body equipped with a holder which laminates large amount of ginseng to multiple stages an indirect heating means(40) which generates convective circulation type heating air current by heating internal air of the dryer body with a high temperature exothermic member(41) circulation flow paths(52) which receive hot water from an outside hot water generating device and a direct heating means heating the ginseng at a medium temperature with a medium temperature heating member(53) which has several heating nozzles arranged among the circulation flow paths with intervals. A steam inlet(43) and a steam outlet(44) are respectively connected to a steam providing device.
