The coffee bean germination device comprises: a water tank for storing water； a first heater installed in the water tank, and heating water； a germination tank including a body and a cover for opening and closing the top surface of the body, wherein the body includes an inlet for being provided with water from the water tank, and an outlet for discharging water to the water tank； a shower installed in the cover, and spraying water supplied from the water tank to the inside of the body； a germination container disposed in the germination tank, and accommodating coffee beans therein； a circulation pump for circulating water； a container rotation unit installed in the germination tank, and rotating the germination tank in one direction to make the coffee beans accommodated in the germination container agitated and reversed； a floating means installed in the germination tank, spraying air toward the germination tank, and floating the coffee beans accommodated in the germination container； and a controller for controlling operations of the shower, the circulation pump, the container rotation unit, and the floating means. According to an embodiment, a germination container is rotated by using a container rotation unit as a medium, coffee beans accommodated therein can be naturally agitated and reversed. Thus, the coffee beans can be prevented from being pressed to be softened or damaged, and the coffee beans can be evenly germinated.
