- 本发明公开了一株冠突散囊菌发酵液粗肽提取物在延长熟肉保质期中的应用,所述冠突散囊菌的保藏编号为CGMCC NO:17186。将冠突散囊菌发酵液以13000r/min离心20min,利用0.22μm的滤膜除菌体,通过10kDa的超滤膜截留后,将截留组分经过离子交换层析分离,获得的活性组分通过真空冷冻干燥后得到粗肽提取物粉末,用去离子水复溶粗肽提取物(10mg/mL),蛋白质含量为33.25μg/mL;将25g熟猪肉浸泡于粗肽提取物中20s,沥干,4℃真空冷藏。与相同真空冷藏条件下,无处理的熟猪肉相比,保质期可延长2d。本发明安全、无毒,保鲜效果显著。
