A low temperature dehumidifying dry solid fermenter has been developed by installing a low temperature dehumidifying device in a conventional solid fermentor which has not been attempted for minimizing the number of viable cells and physiologically active ingredients in the drying process of solid fermented products and for quick drying under low temperature conditions. In order to investigate the effect of fermentation, the drying rate, viable cell count and physiological activity of the dried materials using solid fermentor and low temperature dehumidifying dry solid fermentor were compared and analyzed. The results showed that the dry fermentation time of the low temperature dehumidifying dry solid fermenter was higher than that of the solid fermentor, and the drying speed, color after drying, lactobacillus plantarum , Saccharomyces cerevisiae , pH, crude protein content, calcium content, 0.2% pepsin digestibility, B-mannanase, total polyphenols, total flavonoids and antioxidant activity (DPPH, ABTS) were similar or higher than those of the solid fermented product before drying. In the solid fermenter, it took 158 hours to dry up to 15% in natural drying, whereas in the solid fermenter with low temperature dehumidifying drying system, the water content dropped to 15% in 35 hours and less than 10% in 30 hours The dehumidifying effect of decreasing the water content was confirmed.고체발효물의 건조공정에서 생균수와 생리활성 성분 감소를 최소화 및 저온 조건에서 빠른 건조를 위하여 시도된 적이 없는 기존의 고체발효기에 저온제습 장치를 설치하여 저온제습건조고체발효기를 개발하였으며 저온제습건조고체발효기의 효과를 알아보기 위하여 고체발효기와 저온제습건조고체발효기를 이용한 건조물의 건조속도, 생균수 및 생리활성을 비교 분석하였다. 그 결과 저온제습건조고체발효기가 고체발효기보다 건조속도, 건조 후 색깔, 생균수 함량(Lactobacillus plantarum, Saccharomyces cereviase), pH, 조단백질 함량, 칼슘(Ca)함량, 0.2% 펩신소화율, 0.2% KOH 용해도, B-mannanase, 총 폴리페놀, 총 플라보노이드 및 항산화활성(DPPH, ABTS)이 건조전의 고체발효물에 대비하여 유사하거나 높게 나타났다. 또한 고체발효기에서의 자연건조시 15% 함량까지 건조시키는데 158시간이 소요된 반면, 저온제습건조시스템이 도입된 고체발효기에서는 약 30시간에서 함수량이 15%대로 떨어졌으며, 35시간 후, 10% 미만까지 함수량이 떨어지는 제습효과를 확인하였다.
