Method for recovering starch (11a) from starchy plants, particularly from potato tubers or cassava roots, characterised by the following steps: opening up the starchy plants, in particular by comminution, and releasing starch separating the comminuted plants into a first starch-rich fraction (1) and a fibre fraction (2) which is low in starch in relation thereto high-pressure treating the low-starch fibre fraction (2) to open up the cells using high-pressure, thus releasing more starch and separating the low-starch fibre fraction treated by high pressure into a second starch-rich fibre fraction and a second low-starch fibre fraction (figure 1).
