The present invention relates to a method for manufacturing a Flammulina velutipes fermented solution for enhancing immunity containing high-concentration GABA through lactic acid fermentation, and specifically, to a method for manufacturing a functional Flammulina velutipes lactic acid fermented solution for enhancing immunity containing high-concentration GABA by using Lactobacillus plantarum EJ2014 (KCCM11545P), which is a lactic acid bacterium manufacturing GABA. On the other hand, the present inventors tried to develop a functional fermented product by manufacturing a test product such as a sweet jelly of red beans or seasoning and the like by using the fermented solution.본 발명은 젖산 발효를 통한 고농도 GABA 함유 면역증진 팽이버섯 발효물 제조방법에 관한 것으로서, 상세하게는 GABA를 생산하는 젖산균인 락토바실러스 플란타럼(Lactobacillus plantarum) EJ2014(KCCM11545P)를 이용하여 고농도 GABA가 함유되고 면역증진 효과가 있는 기능성 팽이버섯 젖산 발효물 제조 방법에 대한 것이다. 한편, 본 발명자들은 상기 발효물을 이용하여 양갱 또는 조미료 등의 시제품을 제조하여 기능성 발효제품을 개발하고자 하였다.
