The present invention relates to a method for improving stability of retinyl palmitate including pectin, and more specifically, to a method of using pectin, which is a high molecular substance, having antioxidant effect in order to improve stability of unstable retinyl palmitate which is easily oxidized. Pectin according to the present invention has features of excellent gel formation effect and anti-oxidation effect so that, when using retinyl palmitate mixed with the pectin, the retinyl palmitate provides improved anti-wrinkle effect and thus, it can be usefully applied to drugs, cosmetics, etc.본 발명은 펙틴(Pectin)을 포함하는 레티닐 팔미테이트(Retinyl palmitate)의 안정성을 증가시키는 방법에 관한 것으로서, 더욱 구체적으로는 쉽게 산화되는 불안정한 레티닐 팔미테이트의 안정성을 개선시키기 위한 용도로 항산화 효능이 있는 고분자 물질 펙틴을 이용하는 방법에 관한 것이다. 본 발명에 따른 펙틴은 겔 형성 효과 및 항산화 효과가 우수한 특징이 있으므로, 펙틴과 레티닐 팔미테이트를 혼합하여 사용할 경우 레티닐 팔미테이트가 보다 효과적으로 주름개선 효과를 가지게 되어 의약품 또한 화장료 등에 유용하게 적용될 수 있는 효과가 있다.
