PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsified fat composition with a high oil content, having improved flavor and richness, and emulsifiable stably even when using a solid fat, and in addition, to provide an oil-in-water type emulsified fat composition with a high oil content emulsifiable stably even when being frozen or heated.SOLUTION: A fat having saturated fatty acid in a specific range and a melting point in a specific range, and a water phase part which has viscosity by a thickening stabilizer are emulsified by using two kinds of different emulsifier (A) and emulsifier (B) at a specific ratio, to thereby obtain an oil-in-water type emulsion with a high oil content having improved flavor and richness.SELECTED DRAWING: None
