PROBLEM TO BE SOLVED: To provide a coffee bean roasting device and method, increasing a roasting efficiency by far-infrared rays, and preventing a foreign matter such as tar leached from coffee beans from adhering to the skin of the beans so as to obtain roasted coffee beans which are excellent in flavor, and rich in mineral component useful for the human body.SOLUTION: A roasting device includes: a hollow roasting container 3 having a roasting chamber 4 in the inside a heater 7 for heating the roasting container 3 and granular materials 8 stored together with coffee beans in the roasting chamber 4. The roasting container 3 is formed in a hollow shape from an igneous rock containing silicon dioxide.
