PROBLEM TO BE SOLVED: To provide a method for producing a dry deep-fried food having a tempura-like flower-blooming structure.SOLUTION: A method for producing a dry deep-fried food includes: sinking in oil a frame mold for frying, having a dish-like frame mold in the lower part of a cylindrical frame mold in a state that part of the cylindrical frame mold projects onto an oil level throwing primary batter into the frame mold for frying and frying so as to make a primary coating having a flower-blooming structure moving the frame mold for frying until the dish-like frame mold comes out to the oil level putting the primary coating on the dish-like frame mold in a state of removing or not removing the cylindrical frame mold throwing secondary batter into the dish-like frame mold followed by heating on the surface layer of the oil level making a plate-like secondary coating below the primary coating so as to bind to the first coating removing a deep-fried food in which the primary coating and the secondary coating are bound from the frame mold by sinking in oil the dish-like frame mold or the frame mold for frying and sinking the deep-fried food in oil followed by immersion frying and drying.SELECTED DRAWING: Figure 5COPYRIGHT: (C)2018,JPO&INPIT【課題】本発明は、天ぷら様の花咲構造を有する乾燥フライ食品の製造方法を提供することを目的とする。【解決手段】筒状型枠の下部に皿状型枠があるフライ用型枠を筒状型枠の一部が油面上に飛出る状態で油中に沈めた後、フライ用型枠内に一次バッター液を投入してフライし、花咲き構造を有する一次衣を作製した後、皿状型枠が油面上に出るまでフライ用型枠を移動して、筒状型枠を外すか、外さない状態で、一次衣を皿状型枠に乗せ、皿状型枠に二次バッター液を投入して油面の表層で加熱し、一次衣と結着するように一次衣の下に板状の二次衣を作製し、一次衣と二次衣が結着したフライ食品を皿状型枠またはフライ用型枠を油中に沈めることで型枠から外し、フライ食品を油中に沈めて浸漬フライして乾燥することで解決する。【選択図】図5
