PROBLEM TO BE SOLVED: To provide an Itea japonica Oliver rice cracker that contributes, simply by eating a fixed number of crackers, to suppressing daily abnormal rise in plasma glucose concentration.SOLUTION: Provided is, in a starch rice cracker in which a dough incorporating D-psicose is used, an Itea japonica Oliver rice cracker in which: root, stem and leaves of raw Itea japonica Oliver obtained by taking out the Itea japonica Oliver of a seedling size obtained by tissue culturing a portion of a plant Itea japonica Oliver, from the culture medium, and by washing with water, are all made into a pressed flower rice cracker using the figure as it is combined D-psicose incorporated and the D-psicose contained in the Itea japonica Oliver plant are contained in an amount of 5 wt.% or more and 1 rice cracker contains the D-psicose by 150 mg or more.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】決まった枚数を食するだけで、血漿グルコース濃度の日内異常上昇を抑制することに寄与するズイナせんべいの提供。【解決手段】D-プシコースを配合した生地を用いるデンプンせんべいにおいて、植物体ズイナの一部分を組織培養した苗木サイズのズイナを、培地から取り出し水で洗浄した生のズイナの根、茎、葉全てをそのままの姿を用いて押し花せんべいにし、配合したD-プシコースおよびズイナ植物に含まれるD-プシコースが合わせて5重量%以上の量で含まれ、1枚のせんべいにD-プシコースを150mg以上含有するズイナせんべい。【選択図】図1
