PROBLEM TO BE SOLVED: To provide a steam sterilizing device and a steam sterilizing method which prevent the rupture of a sterilizing bag and reduce operation time.
SOLUTION: The steam sterilizing device 1 includes a sterilizing tank 4 configured to house an article 3 to be sterilized which is packaged by the sterilizing bag 2, a steam feeding means 5 for feeding steam for sterilization inside the sterilizing tank 4, an exhausting means 6 configured to discharge a gas inside the sterilizing tank 4 and to adjust a flow rate of the gas to be discharged, and a control means 8 for controlling the steam feeding means 5 and the exhausting means 6 and carries out an operation process including an exhaust process for discharging the gas inside the sterilizing tank 4 and a steam feeding process for feeding the steam inside the sterilizing tank 4 for sterilizing the article 3 to be sterilized. The time for the operation process is reduced by controlling the exhaust means 6 by the control means 8 during the exhaust process to vary the flow rate of the gas discharged from the inside of the sterilizing tank 4 while preventing the rupture of the sterilizing bag 2.
