PROBLEM TO BE SOLVED: To produce a treated product of a tea extract highly containing epicatechin gallate from a liquid containing the extract of the tea belonging to the genus Camellia of Theaceae.SOLUTION: The method for producing the treated product of the tea extract includes subjecting a liquid containing the extract of the tea belonging to the genus Camellia of Theaceae to a treatment of regulating the pH to ≥7.0, and passing a gas containing oxygen therethrough. As a result, the treated product of the tea extract containing the epicatechin gallate and epigallocatechin gallate regulated so that the ratio (A/B) of the content (A) by weight of the epicatechin gallate to the content (B) by weight of the epigallocatechin gallate may be ≥3.0, and the pH may be ≥7.0 is obtained.COPYRIGHT: (C)2013,JPO&INPIT【課題】ツバキ科カメリア属に属する茶の抽出物を含有する液から、エピカテキンガレートを高含有する茶抽出処理物を得る。【解決手段】ツバキ科カメリア属に属する茶の抽出物を含有する液に、pHを7.0以上に調整して酸素を含む気体を通気する処理を施す。これにより、エピカテキンガレートとエピガロカテキンガレートとを含有し、エピカテキンガレートの含有重量Aと、エピガロカテキンガレートの含有重量Bとの比A/Bが3.0以上であり、かつ、pHが7.0以上である茶抽出処理物が得られる。【選択図】なし
