<;P>;PROBLEM TO BE SOLVED: To provide a tasty antimicrobial rice syrup of high nutritive value, having high antimicrobial activity on carbon dioxide-dependent pathogenic bacteria including Helicobacter pylori, being safe even if daily taken with no problems such as side effects. <;P>;SOLUTION: The antimicrobial rice syrup is produced through: the step 1 for adding 2-20 vol. times of water to raw rice followed by heating/pressurization for 1-60 min at 100-190°;C and 0.01-0.8 MPa to carry out a high-temperature/high-pressure treatment, mixing by a homogenizer and then cooling to 40-55°;C; and the step 2 for adding amylase and protease to the resultant treated product to carry out an enzyme reaction for 10-120 min followed by heating to 95°;C or higher to deactivate the enzymes. <;P>;COPYRIGHT: (C)2006,JPO&NCIPI
