An oil dehydrator for flat-shaped fish cakes of the present invention comprises: conveyors disposed in a multistage configuration to have intervals along a moving path and moving fish cakes transferred from a frying device along the moving path oil dehydration rolls installed at the intervals of the conveyors to come in close contact with each other&primes top and bottom parts so that the top and bottom surfaces of the fish cakes moving along the moving path are pressurized and frying oil is absorbed at the same time and a frying oil collecting unit that transfers a suction force to the oil dehydration rolls, stores the frying oil transferred through the oil dehydration rolls, and separates and discharges the suctioned air to the outside. The present invention relates to an oil dehydrator for flat fish cakes. More specifically, the position to be pressurized can be easily adjusted by the thickness of the fish cakes. The frying oil can be adsorbed and absorbed by using filters attached to the oil dehydration rolls. The frying oil of the frying device can be recycled by being separated in a separation tank. The frying oil on the surface of the fish cakes is removed so that the fish cakes become clean and diseases caused by cancer-causing materials can be prevented.
