PROBLEM TO BE SOLVED: To provide a method for thawing frozen whale meat, enabling anybody to obtain thawed whale meat with preferable flavor.
SOLUTION: This method for thawing the frozen whale meat comprises previously leaving before thawing, frozen whale meat preserved at &le-30°C as it is, at -5°C to -3°C for 2-7 days so as to eliminate ATP in the meat to &le10%, and thawing the meat at normal temperature.
