PROBLEM TO BE SOLVED: To provide a freeze-dried scrambled egg and a freeze-dried scrambled egg soup, which are reconstituted in a short time and allow the reconstituted scrambled egg to have an excellent softness and a manufacturing method thereof.SOLUTION: A solution blended with polydextrose in advance is prepared. The blending amount of polydextrose in the solution is determined such that the proportion reaches 5.0 to 25 wt.% relative to the egg for use. An egg liquid is added to the heated solution, so that scrambled egg is formed from the solidified egg. Using the scrambled egg, a freeze-dried scrambled egg or a freeze-dried scrambled egg soup is manufactured. When hot water is added to the freeze-dried scrambled egg or the freeze-dried scrambled egg soup thus manufactured, a scrambled egg in a soft state is reconstituted in a short time.
