Disclosed is a method for manufacturing stock and powder added to food using shark bones and, more specifically, to a method for manufacturing stock and powder of shark bones which comprises: a blood draining step of removing blood from shark bones by soaking the shark bones in water; a fishy smell eliminating step of putting the shark bones, from which the blood has been removed through the blood draining step, in a mixture for eliminating a fishy smell and boiling the same; a first extracting step of putting the shark bones, from which the fishy smell has been eliminated through the fishy smell eliminating step, in a heating container having a cooling means with water and heating the same while cooling the water vapor so as to extract large amounts of stock; and a second extracting step of separating the stock, which has been prepared through the first extracting step, from the heating container and adding water to the heating container and heating the same while cooling the water vapor so as to large amounts of stock. The stock manufactured through the steps and powder to added to food are rich in active ingredients contained in the shark bone, thereby being good for human body, having no fishy smells, and being richly flavored.개시된 내용은 상어뼈를 이용한 육수 및 식품첨가용 분말의 제조방법에 관한 것으로, 더욱 상세하게는 상어뼈를 물에 함침하여 핏물을 제거하는 핏물제거단계, 상기 핏물제거단계를 통해 핏물이 제거된 상어뼈를 비린내 제거용 혼합물에 투입하고 가열하는 비린내제거단계, 상기 비린내제거단계를 통해 비린내가 제거된 상어뼈를 냉각수단이 구비된 가열용기에 물과 함께 투입하고 가열하되, 증발하는 수증기를 냉각시켜 다량의 육수를 추출하는 제1추출단계 및 상기 제1추출단계를 통해 제조된 육수를 가열용기로부터 분리하고, 상기 가열용기에 물을 첨가하여 가열하되, 증발하는 수증기를 냉각시켜 다량의 육수를 추출하는 제2추출단계로 이루어진다.상기의 과정을 통해 제조되는 육수 및 식품첨가용 분말은 상어뼈에 함유된 유효성분이 풍부하게 함유되어 인체에 유익할 뿐만 아니라, 비린내가 제거되며 풍부한 향미를 나타낸다.
