The present invention relates to a method for manufacturing soft food for an aged person having inconvenience of mastication and deglutition, which maintains the shape of food by acceleration of penetration of a catalyst into the inside of a food ingredient and facilitating consistent catalytic reaction under high pressure condition, while softening the hardness. The method includes the steps of: heating food ingredients and performing pretreatment； freezing the food ingredients； treating the food ingredients with a catalytic solution； performing a catalytic reaction on the good ingredient under high pressure； and deactivating the catalyst.본 발명은 고압 조건하에서 식품 원료 내부로의 효소 침투와 식품 원료에서의 균일한 효소 반응의 촉진을 통해 식품의 형태는 유지하되 경도를 연화시켜 저작 및 연하가 불편한 고령자를 위한 연질 식품의 제조방법에 관한 것이다.
