The present invention relates to a method for manufacturing soft food for an aged person having inconvenience of mastication and deglutition, which maintains the shape of food by acceleration of penetration of a catalyst into the inside of a food ingredient and facilitating consistent catalytic reaction under high pressure condition, while softening the hardness. The method includes the steps of: heating food ingredients and performing pretreatment; freezing the food ingredients; treating the food ingredients with a catalytic solution; performing a catalytic reaction on the good ingredient under high pressure; and deactivating the catalyst.본 발명은 고압 조건하에서 식품 원료 내부로의 효소 침투와 식품 원료에서의 균일한 효소 반응의 촉진을 통해 식품의 형태는 유지하되 경도를 연화시켜 저작 및 연하가 불편한 고령자를 위한 연질 식품의 제조방법에 관한 것이다.
