A method for preparing a coating material for a food product comprises (i) a gel preparation stage in which a composition comprising an anionic polysaccharide is maintained at a pH of from 3.3-3.9 to increase its viscosity and (ii) a coating formation stage in which the gel is homogenised. The anionic polysaccharide is preferably an alginate. The polysaccharide may be present in the composition in an amount of from 1 to 10%, preferably 3 to 6%. The composition may include an acidic buffer, preferably selected from citric, lactic, acetic or ascorbic acids and their respective sodium salts. The coating material may include starches, plasticisers, smoke derivatives, hydrocolloids and/or insoluble fibres. The viscosity of the coating material may be least 20%, preferably at least 100% greater than the viscosity of the composition. The food product is preferably a skinless sausage, and may be co-extruded with the coating material. The method may include strengthening the coating by contacting with group 2 metal ions, preferably calcium. A coating composition or components thereof provided in kit form is also claimed. An apparatus for preparing a coated food product comprising a tank, a homogeniser, a coating device and a storage area is also claimed.
