PROBLEM TO BE SOLVED: To provide a cooking device and a cooking method which can prevent degradation of oil and fat for cooking.SOLUTION: A cooking device 1 comprises: an antenna 2 arranged in an oil bath containing oil and fat for cooking and immersed in the oil and fat and a transformer 31 having an AC power source as a primary side input and an AC power output made by overlapping a frequency component and a harmonics content of a fundamental frequency of the AC power source provided on a secondary side. When the oil and fat is heated and food is immersed in the oil and fat to cook, the antenna 2 is immersed in the oil and fat, the secondary side output of the trans 31 is fed to the antenna 2, and AC electric field emitted by the antenna 2 is given to the oil and fat. In this way, oxidation of the oil and fat is suppressed, generation of various kinds of substances caused by chemical reaction of fatty acid ester of glycerin is suppressed, and life of the oil and fat is extended drastically to more than three times.SELECTED DRAWING: Figure 2COPYRIGHT: (C)2018,JPO&INPIT【課題】調理用油脂の劣化防止を図ることができる調理器具及び調理方法を提供する。【解決手段】調理器具1は、調理用の油脂が入れられた油槽内に配置され油脂に浸漬させるアンテナ2と、交流電源を1次側入力とし、2次側に交流電源の基本周波数の周波数成分と、その高調波成分とが重畳した交流出力が得られるトランス31と、を備える。油脂を加熱して油脂に食材を浸漬して調理を行う際に、アンテナ2を油脂に浸漬し、トランス31の2次側出力をアンテナ2に供給して、アンテナ2により放射される交流電界を油脂に付与する。これにより、油脂の酸化が抑えられ、グリセリン脂肪酸エステルの化学反応による種々の物質の生成が抑えられ、油脂の寿命を3倍以上に飛躍的に延長することができる。【選択図】図2
