PROBLEM TO BE SOLVED: To provide a medical image processing device that generates an image where a color difference between an abnormal part and a normal part is enhanced, and to provide an endoscope system.SOLUTION: The medical image processing device acquires a color tone from a first color image signal, adjusts a pixel value of a second color image signal that can be acquired via color information conversion processing that is based on the color tone based on first brightness information acquired from the first color image signal, where the color information conversion processing shifts each of the multiple ranges before conversion distinguished by the color tone to ranges of conversion destination corresponding to the ranges before conversion.SELECTED DRAWING: Figure 4
