A series of carnallite salts (and processes for forming the salts) are disclosed where the salts have the formula:MgCl2•xKCl•yNH4Cl•zH20,wherein x + y is about 1, wherein x is from zero and about 1, wherein y is from 0 and about and wherein z is from about 4 to about 6. The salts may be non-hygroscopic and may be free of hydrogen chloride. The process for forming the carnallite salts may combine in aqueous solution magnesium chloride, potassium chloride and/or ammonium chloride. Further an acid scavenger such as an amino acid (e.g. glycine) may be added. A solid carnallite salt may be precipitated from the solution by evaporation. The carnallite slat may be used as a replacement for sodium chloride in food products. The carnallite salt may be utilised as the core in a particulate composition where outer layers of sodium and or potassium chloride may be added.
