The present invention relates to environmentally friendly processes and compositions for improving the appearance of edible plant matter and foodstuff, for example for enhancing their brightness during all stages of storage and handling, including pre and post harvest, pre and post planting, pre and during storage, distribution, packing lines and marketing. The methods of the present invention involve contacting the edible plant matter with a composition comprising phosphonic acid and/or a salt thereof, according to a schedule as described herein. The edible plant matter can come in contact with the phosphonic composition by various methods such as dipping or immersing the edible plant matter in the composition, spraying the composition onto the edible plant matter, exposing the edible plant matter to a fog or gas of the composition, or any combination thereof.La présente invention concerne des procédés et des compositions respectueux de lenvironnement pour améliorer laspect dune matière végétale comestible et dun produit alimentaire, par exemple pour améliorer leur brillance pendant tous les stades de stockage et de manipulation, comprenant la pré- et post-récolte, la pré- et post-plantation, avant et pendant un stockage, une distribution, des lignes demballage et une commercialisation.
