PROBLEM TO BE SOLVED: To prepare a cooked shell egg containing fluid or soft-boiled albumen on an industrial scale at a low cost while considerably reducing egg breakage ratio.SOLUTION: A shell egg is stored in an egg storage house and heat-treated to obtain a cooked shell egg containing heat-treated albumen (excluding hard-boiled egg). In the above process, the storage of the shell egg in the egg storage house is carried out while removing carbon dioxide in the atmosphere of the egg storage house with a carbon dioxide removing means. The carbon dioxide concentration in the atmosphere of the egg storage house is maintained to &le300 ppm by the carbon dioxide removing means. The storage of the shell egg in the egg storage house is preferably carried out until the pH of raw albumen of the shell egg becomes &ge9.15. The storage period of the shell egg in the egg storage house is set to a level not to lower the Haugh unit of the shell egg of 70.COPYRIGHT: (C)2010,JPO&INPIT【課題】卵白が流動性の乃至は半熟状の殻付加熱処理卵を、破卵の割合を大きく低減させつつ、工業的に有利に製造する。【解決手段】殻付卵を、貯卵庫で保管した後、加熱処理することにより、卵白が加熱処理されてなる殻付加熱処理卵(ただし、ゆで卵を除く。)の製造方法において、殻付卵の貯卵庫での保管を、貯卵庫内雰囲気中の二酸化炭素を二酸化炭素除去手段により除去しながら行う。貯卵庫内雰囲気中の二酸化炭素を、貯卵庫内雰囲気中の二酸化炭素濃度が300ppm以下に維持されるように二酸化炭素除去手段により除去する。貯卵庫での殻付卵の保管は、殻付卵の生卵白のpHが少なくとも9.15以上となるまで行うことが好ましい。このとき、殻付卵の貯卵庫での保管期間は、殻付卵のハウユニットが70未満とならない期間である。【選択図】なし
