FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular, to a method for determination of Bashkir wild-hive honey collection point by results of pollen analysis. Method for determining the geographical origin of the Bashkir honeycomb by pollen composition consists in the fact that the composition of pollen in honey is used to diagnose its collection point. Geographic origin of beehive honey from the northern zone (northwest of Burzyansky district, Ishimbaysky and Beloretsk districts) is detected by low share of small-leaved linden pollen (<;15 %), by high percentage of pollen of meadowsweet (up to 90 %), cultivated angelica (up to 40 %), mountain stone-parsley (up to 25 %), bellflower (up to 25 %), wild angelica (up to 20 %), St. John's wort (up to 20 %), Pleurospermum uralense (up to 15 %), meadow clover/broad-leaved clover (up to 15 %), sage (up to 15 %) and spring plants (up to 25 %), as well as the presence in the pollen spectrum of a single pollen of melilot, blue devils and goosefoot family. Bashkir honeycomb origin originates from the southern zone (southwest of Burzyansky district, Meleuzovsky district) by high pollen content of Siberian cow parsnip (up to 40 %), speedwell (up to 40 %), peas (up to 40 %), brown knapweed/Centauréa pseudophrýgia (up to 25 %), common origanum (up to 15 %). Place of collection of side honey produced in the protected area (Shulgan-Tash Nature Reserve, Bashkiria National Park) is detected by low content of pollens of synanthropic plants (<;15 %). Place of collection of wild-hive honey produced near settlements of Burzyansky, Ishimbaysky, Meleuzovsky and Beloretsky districts is selected according to high share of pollen of small white clover (up to 35 %).
