The present invention provides a preparation method for instant brewing swallow nest. The preparation method includes the following steps: (a) placing a dried swallow nest in water and soaking for 2 hours or more to obtain an expanded swallow nest (b) stewing the expanded swallow nest in water at temperature of 85-100DEG C under ambient pressure for 1 hour or more to obtain an aged swallow nest (c) using a vacuum concentration procedure to remove the water in the aged swallow nest, such that the water content in the aged swallow nest is lower than 15 wt% for obtaining a concentrated aged swallow nest and (d) using a vacuum freeze drying procedure or vacuum microwave drying procedure to dry the concentrated aged swallow nest, so that the water content in the concentrated aged swallow nest is lower than 3 wt%, thus obtaining an instant brewing swallow nest.本發明提供一種即食沖泡燕窩的製備方法。所述製備方法包括下列步驟:(a)取一乾品燕窩置於水中,浸泡2小時以上,得一膨發燕窩;(b)將此膨發燕窩於常壓下、85-100℃的水中燉煮1小時以上,得一熟成燕窩;(c)以真空濃縮程序移除熟成燕窩水分,使此熟成燕窩的含水量低於15wt%,得一濃縮熟成燕窩;以及(d)以真空冷凍乾燥程序或真空微波乾燥程序對此濃縮熟成燕窩進行乾燥,使此濃縮熟成燕窩的含水量低於3wt%,獲得所述即食沖泡燕窩。S01-S04‧‧‧步驟
