The invention relates to a device (1) for sterilising a material including a means for emitting waves, said device (1) being characterised in that the wave-emitting means is designed to cause a first increase in the temperature of said material to a first set value (T1) which is not sufficient for sterilising said product, a first reduction of said temperature of said material from the first set value (T1) to a second set value (T2), substantially lower than the first set value (T1), and a second increase in the temperature of said material from the second set value (T2), the combination of the first increase (30), the first reduction and the second increase in the temperature making it possible to sterilise said product. The invention can be used in devices for sterilising materials.
