PURPOSE: Nutrient-enriched rice is provided to relieve nutritional imbalance of single cereals such as rice by containing Spirulina as a composition component. CONSTITUTION: Nutrient-enriched rice contains Spirulina or at least one of Spirulina-originated active ingredient as a composition component. The nutrient-enriched rice further contains food dyes as additional components. The composition of the Spirulina or the Spirulina-originated active ingredient is any one selected from the following: a natural material as collected from nature and a crushed material thereof； extract of the natural material； infusion of the natural material extract； condensed products obtained by condensing a part or all the infusion； infusions, decoction, essence, fluid extracts manufactured by drying the condensed products； chemical substances which provide the active ingredient contained in the natural material； and materials obtained by additionally adding physical or chemical treatment processes in order to maximize stability and efficiency of the natural material abstract.본 발명은 통상의 쌀에 공통적으로 타 물질로부터 유래된 영양성분을 1종 이상 추가로 가미한 쌀에 관한 것으로 보다 상세하게는 원미 또는 성형미 상에 스피루리나 또는 스피루리나 유래 유효성분 1종 이상을 추가의 구성요소로 함유시킨 스피루리나가 함유된 영양강화미에 관한 것이다.
